Great receipes, Good cookbook with alot of various selections. Great for anyone that has been recently diagnosed with diabetes and needs to start changing their eating habits and not feeling like the only have a few selections to choose from.

Very clear instructions. For the most part, ingredients one would have in one's kitchen. Especially, nice is the info at the bottom of each recipe telling calories, diabetic exchanges, even healthy exchanges for Weight Loss Choices. There is a list of favorite brands in the front. All the recipes sound good when one is reading through them, especially when one is humgry. For instance, the Apple Biscuit Breakfast Treat on page 184 sounds so good that one will not feel slighted to be on a diabetic diet when it is prepared.

My first recipe using the Lund's Splenda cookbook, Becky's Porcupine Meat Loaf, tasted like Porcupine Meatballs without all the work. Easy to fix, heathy, and a "keeper recipe". We'll be trying out other recipes and I'm sure most will be just as tasty.
