I went crazy studying for AP Env- I read thoroughly my textbook, made a page review sheet on each chapter, read thoroughly through the Kaplan book, read thoroughly through the Princeton book and did the end of chapter practice questions to each book, read thoroughly through my class notes, and did the two multiple choice practice tests that are out from College Board. So, being that I am a student who can compare all these things, I could tell you that I think Kaplan was more detailed which is good if you are either teaching it to yourself or dont really remember everything from class. If you just need a review, Princeton is good but thats really JUST a review, it doesnt really go in-depth of all you need to know. About the practice tests, the 1st one that came out is easier than the actual AP i took, and i heard thats true of all APs in the last couple of years. The second AP that came out which i believe was 2003s, our class considered it much harder than the one we took. I hope this review helped. Good luck!
