The intent is to inform the layperson about the dangers of overloading the human body with high salt intake through processed foods. At the same time, we want to inform students, and perhaps more importantly to pique the interest of future scientists, about what lies ahead in this important field. The authors wish to share their current knowledge with others who may be curious about how salt is basic to life. Readers need to know about how eating salt or the ingestion of saline water increases the level of sodium ions in blood, creating a condition called hypernatremia. This causes the brain to signal the kidney to excrete these ions in the production of more urine. In addition, humankind needs to know how the cells that make up the body walls can perceive the genetic signals that allow them to pass these ions from the blood to the outside environment. It is this problem that we hope to motivate our readers to explore further, by noting areas of recent discoveries cited in the text and listed in the references.
