I visited Arrowhead Mills in 1978 in Hereford TX

While struggling to improve my health in those days, Arrowhead Mills was the leading provider of healthy ingredients, such as Valencia peanuts from across the border in Portales NM, organic millet from North Dakota, host of others. Mr Ford was in the forefront, later of course "selling out" as often is the case. However his then wife pieced together this monumental work, a cookbook, which I obtained when I realized as a sworn bachelor that I needed to learn the art and science of baking, among other skills for improved nutrition. I cannot thank her enough for providing the impetus in my life in making the transition from college dining, to military chow halls, to standard American fare. One recipe in particular is making ferment, mixing corn and wheat flour, refrigerating it, and making the very best muffins imaginable. Fond memories! Years later the folks in Texas still marvel at this lady's accomplishments, and that says it all! Get it while readily obtainable. It is better than the old Betty Crocker from the standpoint of whole grain cooking. Matter of fact, get yourself two copies of it.
