My 10 year old has loved every meal!

As a working mom - I had gotten very bad about letting my 10 year old son dictate what was for dinner - he would want fast food or pizza and my husband who is a very picky eater has been taking chemo for almost two years - and his tastes changed. After using Holly's Eating Well Through Cancer during some of my husbands toughest time - I decided that as a New Years resolution it was time o cook healthy meals for my family during the week - I picked up The New Holly Clegg Trim & Terrific Cookbook and cooked from it three days this week - all of the ingredients I had in my freezer or pantry and my family loved them all. My son even had 2nds - if you only knew how amazing that is! These recipes are quick, easy, and delicious!
Using this cookbook almost exclusively

I purchased this book about a month ago, and have used it almost every night since then. I love the recipes! They are quick and easy to prepare, but also healthful and delicious. I had a question that I e-mailed Mrs. Clegg about a recipe in the book. I wasn't sure when to peel the shrimp in her recipe for Barbecued Shrimp (p.309). She responded very promptly in a lovely, personal e-mail. She explained that it was a Louisiana type recipe, which explains why this Yankee "Maine-iac" (my label, not hers) didn't know it! By the way, peel them when you eat it! lol After my hubby ate a few meals I prepared from this book he told me I could throw all my other cookbooks away! Try this book, you'll love it.
