I've been vegetarian for twelve years and love cooking. In those 12 years, I've tried out many different cookbooks. This is the only one I've found with consistently great tasting (and easy to prepare) recipes. Sometimes cookbooks have one or two good recipes. All are great in this book. Also a nice feature about it is that there aren't too many recipes. You won't feel overwhelmed flipping through it. I love best these recipes: spaghetti squash with balsamic beans, grilled eggplant and red pepper sandwiches, spicy limas with pita, acorn squash risotto, cous cous burritos, root vegetable soup, spicy indian squash. I've had this cookbook for 5+ years, yet I'm still able to find new recipes to try or to return to old classics. There's nothing 'fad-ish' about this cookbook.
