I subscribed to Vegetarian Times magazine specifically because of this cookbook. I am not a vegetarian (yet), but this sets me on the path to a healthier, meat free diet. I try to make vegetarian meals at least 3-4 times a week. Some recipes are not always fast and easy, but nice variety overall. Good beginner's veggie cookbook - nothing too complicated.

I subscribe to Vegetarian Times and really like the recipes. However, just like any kind of cooking, VT's dishes CAN be complex and time-consuming. The fact that they're vegetarian recipes doesn't automatically mean they're easy to prepare. Here comes this book to show just how simple vegetarian cooking can be. Many of the recipes are so short and quick to prepare that you'll be stunned. They're also remarkably "simple" in the sense that they're not loaded with a gazillion different ingredients. The whole wheat waffles, for example, have a grand total of six ingredients, which is just fine by me, especially since I get a little antsy whenever I have to go through every cabinet in my house to find all the stuff I need to make most things "from scratch." One of the challenges cooks face in a household that is "blended" (that is, composed of both vegetarian and non-vegetarian members) is coming up with dishes that appeal to everyone, taste great, and don't break the bank. These fit the bill. It's not all beans and tofu, either. Wonderful uses for different veggies make it possible to use leftovers and maximize our food dollars. I particularly like the soups and stews, and I'm glad they include simple drinks like aguas frescas (fresh waters made with fruit). I think you'll like this one. The only reason I don't give it five stars is that it is very short on pictures. I really love to see how a dish should look after it's done, and this book has only a few pics to accomplish that goal. If you are looking for a book that contains great vegetarian recipes for really elaborate meals, please search further. But if you want quick, tasty, relatively-inexpensive dishes, this is a good choice!
